We incorporate New Zealand’s finest ingredients with kiwi ingenuity to produce innovative, first-rate spirits that people can get excited about.
We’re driven by a mission to bring more transparency and integrity to the spirits industry. We choose not to compromise on the quality of ingredients and connection to the distilling craft for the sake of scalability.
INGREDIENTS
We choose to use the best ingredients available, rather than cut corners; lemons and oranges grown in New Zealand, hand picked cherries from Otago and sustainably sourced honey. Our goal is to not only use the best ingredients, but to help grow New Zealand business along the way.
DISTILLING PROCESS
Our ethanol is made from sugar cane the same way they did it in the 1900’s. This is unique in New Zealand. It’s cheeper and easier to use the alternative, whey ethanol, (made from milk), which is used by most brands. We believe in using the best to make the best, rather than taking short cuts that compromise the quality of our product.
Our still is New Zealand made and custom built for our Distillery. By choosing to get our still made locally we where able to insure the absolute best quality and craftsmanship, while supporting the grass roots distilling industry in New Zealand.

We are proud to be New Zealand made and walk the walk, not just talk the talk. Next time you are in your local liquor store look for the words “New Zealand made” on the bottle and not just “New Zealand”. You will likely be surprised by the amount of gins that claim to be New Zealand gins, but are not made here and do not have a physical distillery to call home.

We don’t do things in halves at 7K. So when we wanted to make a dry gin with real spice, we couldn’t go past the Carolina Reaper Chilli as our star ingredient. We’ve also gone hard on the juniper, giving it that classic London dryness, and helping bring out a strawberry-like flavour from the Reaper. If this big, bold flavour sounds intimidating, relax – the chilli spice is perfectly balanced in a Bloody Mary, martini or G&T.

The word “barrister” derivates from the English word “bar”, it is the barrier that separates the judge from the defendant. This is the highest rank of lawyer in Britain. Since the XV century, the prisoners could instruct “an educated and eloquent friend” to protect their interests. The barristers had access to the “judicial bar”, thus they could be heard by the court in the interests of their client.
The barrister’s speech in court is precise and sharp as a blade.
They use to say in England about gin that it is “as cold as steel” – due to the strong cold aftertaste.

When the name for the new brand was under discussion on Baker Street in London, the choice fell on “Barrister”, because it reflects best the meaning of the authentic gin AS COLD AS STEEL.

To accentuate herbal aroma and flavour of Barrister gin, aromatic spirits are made from each ingredient and then the mixed in special proportions in accordance with the old English recipe.

Barrister Pink Gin is a new product, that was launched to the market in the beginning of the year 2017. In order to emphasize the taste and aroma of herbs in the Barrister’s formula, the aromatic spirits are first produced from each ingredient separately, and then blended according to the classic English recipe: juniper berry, fresh lemon peel, coriander, cinnamon, caraway, anise and cardamom.
The name «Barrister» , that means a high-level category of British lawyers who are in a privileged position, is dedicated to the noble traditions and manners of England passing to the quality and style of this gin. Barrister Dry Gin has been made in vintage style, in the mood of aristocratic spirit, snobbery in its positive sense, pharmacy-like accuracy and English preciseness.

Citrus is absent from the botanical list, and the juniper is dialled back in this apple & cinnamon flavoured gin. In addition to true cinnamon, the spices clove, nutmeg and star anise are each distilled individually and then added back at an appropriate concentration to the juniper base to create this spicy take on a traditional gin.
Established in 2017, Big River Distilling Co. is sited near the confluence of the Molonglo River and Lake Burley Griffin, Canberra. We create artisan spirits of uncompromising quality using ingredients from Australia and afar.
OUR PRODUCTION PROCESS
Distilling is an exact science, combining flavours and inspiration. Curious and independent, we are guided but not bound by tradition. We create spirits that reflect the unique Canberra environs. They enliven your senses and evoke a sense of time and space.
Our gin is produced using a 420 L stainless-steel pot still fitted with a copper botanical basket in a “single -shot” distillation. Neutral grain spirit (from a wheat based feedstock) of the highest purity (96.0% ABV or higher) is used as the base to ensure the botanical flavours are not muddied by any dirty spirit character. This spirit is cut back with filtered, beautiful Canberra water and 10 different botanicals are added to the pot for a short maceration.
Gin basket for vapour infusing
The remaining 3 botanical ingredients are placed in the botanical basket, out of the way of the direct heat source. This technique is called vapour infusion and preserves the more delicate high-notes in the gin, such as the floral character of the hops. The distiller then makes a heads and tails cut, by nose, keeping only the middle fraction of the distillate, known as the hearts. The 14th and final ingredient, Lebanese cucumber, is added after distillation. Following a few weeks rest to allow for flavour reformation, the gin is bottled at its designated strength.

THE STILL
Our copper still “May” forms the centrepiece of our distillery. Named as both a nod to the fact we finally agreed in May 2020 to embark on this adventure, and also as a homage to the late Mrs May Loftus a Bondi local, who was the first woman to achieve the Bronze Medallion in 1904 which is the prerequisite for becoming a beach lifesaver.
Australian made and manufactured by HHH Distill in Perth by Hilton a retired engineer with a passion for creating copper stills, May has a 200L capacity with 2 separate vapour baskets and a rectifying column to give us maximum control and flexibility in creating and developing a wide range of gins and vodkas, and many other spirits in the future.
THE VENUE
We welcome you to come in with sand between your toes after a day at the beach, or dress up a little bit and feel like you are somewhere special. Whites and blues and soft wood colours will make you feel like you are definitely in Bondi. Choose between outside tables, inside stools and benches or take a more relaxed pose on the couches in our distillery lounge room. Upstairs is more chic with stained black floors to create a bit more of a formal feel.

Brockmans unique recipe of naturally grown aromatic botanicals are steeped in pure grain spirit for many hours to release their natural oils and aromas. The more traditional notes of gin are combined with a refreshing influence of citrus and aromatic wild berries. Bulgarian coriander plays its part, providing an aromatic, gingery orange top note. This blends perfectly with the soft and rounded harmonies of blueberries and blackberries, all of which is supported by the bottom note of Tuscan juniper berries. Dry, bittersweet Valencian orange peel elongates the deeper tones and gives an intensely smooth finish.
Thereafter, Brockmans is slowly distilled in a 100 year old traditional copper still, where we capture the heart of the gin distillation. The distinctive gin notes derived from Brockmans unique recipe deliver an exquisite intensely smooth gin, with a uniquely defining sensual taste experience.

Where the more traditional notes of gin are combined with a refreshing influence of citrus and aromatic wild blackberries and blueberries.
