Organically farmed in Metricup, the 2020 Viognier was handpicked, crushed into basket press and left to soak on skins overnight. Basket pressed to a mixture of 5yr old French barriques and puncheons for wild fermentation.
Aged on lees for 8 months with fortnightly batonnage, before being bottled unfined and unfiltered.
Aromas of topical melon, white stone fruit, lime rind and jasmine. Mouth coating richness is cleaned up with refreshing acid that has excellent line and length.
In the winery we draw inspiration from our namesake, the Black Cockatoo by creating wines that are fun, vibrant and bold. Fruit is sourced from some of the most premium vineyards in the South West, with preference for growers who farm sustainably. In the winery the fruit is handled gently, typically using wild or indigenous yeasts with no fining or filtration.

Dominated aromas of perfumed white flowers and white stone fruits. Light and lively on the palate, displaying attractive inner-mouth perfume and sneaky concentration to its white stone fruit and botanical herb flavors.
This small vineyard is located just north of Hobart on a perfectly positioned north-east facing slope. The beautiful old Georgian homestead of Clarence House was built in 1830 at Clarence Plains, Mt Rumney, has been maintained in its original splendour surrounded by beautiful gardens, and in 1998 present owner David Kilpatrick began planting vines on the north east sloping block facing Mount Rumney just below the Coal River Valley. Over 8ha of the total 12ha of plantings consists of pinot noir and chardonnay, with the remainder including pinot blanc, sauvignon blanc, merlot and tempranillo. All wines are now made by Anna Pooley and Justin Bubb at the nearby Pooley cellar in Cambridge.

Our best orange wine yet. Lifted floral notes and citrus drive with a textural yet bright palate.
Dawning Day Farms is a small family owned and operated micro-vineyard located in Exeter in the Southern Highlands of New South Wales.
This cool-climate region called for the planting of varieties like Chardonnay and Pinot Noir, along with our personal favourite Gamay.
Our 2021 vintage to be released later this year will be the first wine picked and produced from our own block after last year’s grapes were smoke damaged from the Morton bush fires (all was not lost, we turned our grapes into ‘The Bandit’ Gin!).
Meanwhile we have already produced several wines under the Dawning Day brand in partnership with vineyards in the Southern Highlands and other regions within Australia including Rosé, Chardonnay, Pinot Noir, Shiraz, our popular skin contact wine, ‘Skin Shady’ and our sparkling natural wine, the Pet Nat.
In barrel at the moment is our estate Pinot Noir/Gamay blend and for those with some patience, a Methode Traditionelle Sparkling using our estate grown Chardonnay and Pinot Noir is riddling away until 2023.

This wine is inspired by an ancient and distinctive style made from the Savagnin Blanc grape variety
traditionally grown in the Jura region of France where the wine is most famously known as vin jaune. Here the wine is made by a similar process to that of Sherry, developing its unique aromas and flavours in barrel and under a strain of yeast known as flor. These wines can be quite pungent, the result of between 3 and 5 years under the flor yeast. Here the flor yeast which sits on the surface of the wine grows as a thin film or ‘voile’ – veil in English. In order to capture the delicate aromas and flavours of the Savagnin Blanc variety we have aged this wine in one year old French barriques for 8 months under flor.
Served chilled these wines are prefect aperitifs and a wonderful accompaniment to fresh oysters or sashimi.
The familiar aromas of rich fruit and nut cake laced with brandy and touches of marzipan. An intriguing flirtation of Cara Cara orange peel and sun warmed ripe apricots hint at what the palate holds. Intense dried apricots soaked in brown lime cordial delight the palate and toffeed apricots are carried to a seemingly never ending finish.
This wine is not filtered and may appear a little cloudy.

Margaret River Chenin Blanc grown on the Three Hills Vineyard in Karridale handpicked, crushed and pressed straight into old barrels. Spontaneous fermentation with natural yeast, no fining, no filtration, and no stabilisation – nothing added, nothing taken away.
The wine is all Granny Smith apple and quince, dry and fresh.
KP wines are driven by Katie Priscilla Kerrigan, challenging her father, veteran winemaker Michael Kerrigan, to question the way we do things. Wine that displays the true aromas and flavours of the vineyard. Nothing else.

Bianca by KT is made from Vermentino grown by the Koerner family in the hamlet of Leasingham in the Clare Valley. Vermentino is a white grape variety that originally heralds from the island of Sardinia in Italy and is enjoyed for its resistance to dry and warm conditions and its high natural acidity. This wine is created using wild fermentation techniques, meaning 100% indiginous yeast and partially fermented in older French oak barrels.
This Vermentino has gorgeous aromatics and florals and a textural savoury palate with a zesty citrus finish. As is the tradition in Italy – it’s perfectly partnered with sardines.

A juicy, textural chenin blanc sourced from a vineyard in the Yallingup sub region and basket pressed directly to barrels (20% new) and fermented with indigenous yeast. A riper style with juicy pineapple and yellow stone fruit. Basket pressing directly to barrel has resulted in a textural wine with a waxy component.

King Valley fruit. Fermented using indigenous yeasts on active Chardonnay lees. 30% in seasoned French oak barriques, 70% in stainless steel. Kept on lees for 9 months, then blended before bottling. No fining.
Textural yet clean, sea spray and walnut oil warmth. As with all our wines, we like a ‘handmade’ expression about them. Nothing too polished but not lacking in class. Drink with some pungent cheese and unseasoned flat breads.
