For the owners and oenologists of Bourgogne domain Badet Clément, it is a challenge to create a Burgundy style in the south of France. Laurent Delaunay in particular is a specialist in finding vineyards that give the grapes a characteristic expression.
For the white Pontificis white, he selected cool, high-altitude vineyards where the chardonnay and viognier grapes can mature optimally. After fermentation follows a classic maturation in small oak casks and the batonnage technique – originally from Burgundy – is applied. This makes the wine taste wonderfully full and creamy.
Thanks to its original composition, the Pontificis also has aroma and taste characteristics of both white Rhone and classic white Burgundy. This makes it versatile in culinary terms, but also very suitable for drinking on its own.

Wines made from the Aligoté grape are exclusively white.
Aligoté accounts for 6% of all vines in Bourgogne and has a long history here as one of the two local white varietals along with Chardonnay. It is a vigorous vine with larger and more plentiful grapes than Chardonnay.
Bourgogne aligoté is a delicious white wine that is young, stylish and is a little different. It is pale gold in color and offers a well-balanced taste, and ranges from a fruity bouquet with notes of apple and lemon to a more floral palette. In the mouth, this vibrant wine tickles the taste buds.

White blossom flowers are a stand out combining balance, freshness, roundness, minerality and liveliness. Young, Fondraux are pleasant with river fish, cold meats, goat cheese and sweet and savory cuisine. Then, as it ripens for a few years, the flavors fit perfectly with spicy dishes and white meats.
A family estate since 1984. Currently, 25 hectares are cultivated according to sustainable viticulture. The production is distributed in around twenty countries around the world.
Both children winemakers – Catherine is part of the 12 th generation of winemakers on Vouvray and Didier of the 6 th in the Poitou! – Catherine and Didier Champalou from the outset wanted to lead their estate in a direction that was not at all that of the appellation at the time: to allow the singularity of each terroir to express itself thanks to a cuvée that is dedicated. And this mainly in natural wine (80%) while sparkling wines were already the main production (75%) of the AOC.
In a few years, they went from a few hectares to around twenty. Catherine and Didier, long before the ecological movement, put the work of the vineyard in their priority and have always put forward a peasant viticulture, respectful of the environment and sustainable as the basis of a good wine.

Honey and yellow peaches, white flowers, and stony minerality dominate this refreshing and acid-driven palate. Excellent.
Terroir: Clay and limestone
Vinification and aging: The grapes are harvested early in the morning, to benefit from cool temperatures. It is after this decisive step that the bunches are pressed respectfully using pneumatic presses. After careful selection, the juices ferment at low temperature in the tank. Then comes the aging on fine lees, which will bring to the wine: freshness, body, finesse and delicacy.
Food and wine pairing: With the Classic, it is a fresh and fruity wine that expresses itself. The combination of its freshness and delicate flavors allow it to be served with grilled fish and white meats, shellfish, vegetable tians and Japanese dishes. Ideal for an aperitif. Serve at 10 ° C.

Les Preuses is the Grand Cru of Chablis at the Northern end of the Grand Cru area. It is one of the smallest Grand Cru Climat and covers 11.4 ha. The vines selected by Chanson are ideally located right in the heart of the plot. This brings to the wine the specific minerality of this terroir.
The Vintage 2016 : After a cool and rainy winter and a frost episode in April, the weather at the end of spring was warmer but rainy which engendered a late flowering and millerandage (grapes of small size) The summer was warm and dry. September was warm and the harvest took place at the end of the month under a bright sunshine. Vinification : after a mild pressing, this wine was vinified and aged for 10 to 14 months in oak casks in our cellars of the XVth century. Moderate proportion of new oak.
Tasting : Gold colour. Floral fragrances mixed with citrus fruit aromas and pale fleshed fruit. Expressive minerality. Well balanced and elegant texture. Delicate. Resulting from a family of winegrowers dating back 150 years, Daniel DAMPT has joined his domaine with that of his father-in-law’s, Jean DEFAIX.
The estate currently counts 30 hectares of vines in production, including 16 hectares of CHABLIS and 14 hectares of Chablis Ier Cru of which in particular of Vaillons, Fourchaume, Cote de Lechet, Les Lys and Beauroy.
The recently constructed cellaris equipped with stainless steel tanks. The purchase of modern, powerful cellar equipment has enabled the group to increase its production of bottles, which now stands at 150000 bottles per year.
All Daniel Dampt’s wines are produced and bottled by the domaine. This means all his wines are made from grapes grown in his own vine yards, which is a crucial factor in the personnality and quality of the wines.
Now Vincent and Sebastien DAMPT work with their parents on the domain. They have made some training periods in New Zealand and Australia. They give some new ideas to the estate.

The wine is bone dry with great tension and lively thirst quenching acidity showing delicious notes of lemon butter richness and tart grapefruit. There’s also a pleasing oyster shell salinity and driving mineral freshness which gives the wine a slight resemblance to classic Chablis, but at half the price. Absolutely delicious!
Domaine de la Grenaudiere is run by brothers Jean-Luc and Guy Ollivier in the Muscadet Sevre Et Maine appellation in the Loire Valley. Their vineyards are quite old at 25 to 60 years of age. The fruit is hand harvested then full clusters are fermented on indigenous yeasts in temperature controlled stainless steel tanks and in cement tanks before aging in tanks with lees stirring.

Fairly restrained on the nose, savoury herbs and citrus on the palate. Well balanced with a suggestion of “hot stone” minerality.
Vineyards are in the Hautes Côtes, at the top of the slopes just above Domaine de la Motte’s Chablis classified plots and so achieve good ripeness. The soil is Portlandian, which is less chalky than Kimmeridgian, and typically produces wines which are less mineral and more fruity, well suited to earlier drinking. Having said that, Motte’s wine has real finesse with good fruit character – very much their house style. Cool-fermented in stainless steel, malolactic fermentation is also in stainless steel and the wine is unoaked.
