Founded in 2000 by local growers, Adega Eidos produces Albariño from grapes grown exclusively in and among the gardens of Sanxenxo in the parish of Padriñán, located at the southern extreme of Rías Baixas’ Val do Salnes subdistrict. The ‘Eidos’ (garden arbors) in Sanxenxo – 100 acres of which Adega Eidos owns – are traditionally trained, are almost always ungrafted, and are over 50 years of age.
Since 2003, winemaking has taken place in a winemaking facility of efficient and modern design overlooking Sanxenxo harbos. Selected bunches are brought the short distance in small crates, and are then sorted before the de-stemming, crushing and cold maceration processes. Natural yeasts undergo temperature control to achieve long fermentations and natural clarification, and the wines are left on their fine lees until bottling. Eidos de Padriñán is considered to be the primary wine of the larger estate, as it offers ripe and extracted Albariño fruit with clear mineral notes from the sea breeze and granitic soil.

The Wine
Vibrant, mineral-driven citrus and orchard fruit aromas are complemented by honeysuckle, ginger and a touch of quinine. On the palate, bitter pear skin and Meyer lemon flavors show very good depth and vivacity, along with a firming jolt of smoky minerality. The finish unwinds slowly, showing excellent concentration, persistence and lingering floral character.

Fermented spontaneously in open boxes, in contact with the skins for 24 days. The skins are pressed and the wine spends 10 months in stainless steel. The wine is lightly sulfured at bottling.

The Bürklin-Wolf estate is based in the Mittelhaardt, the quality core of Germany’s world-renowned Pfalz, around the towns of Wachenheim, Forst, Deidesheim and Ruppertsberg. Here with 85ha under vine they have the largest family owned wine estate in all of Germany originating in 1597, with a treasure-trove of superb vineyards, at the centre of which lies the great Kirchenstück. Here in the tiny village of Forst, Kirchenstück and its neighbours Jesuitengarten, Ungeheuer and Pechstein, have for centuries been recognised as producing not only some of the world’s greatest dry Rieslings, but simply some of the world’s greatest wines. In the nineteenth century, prices for these wines exceeded the prices paid for 1st Growth Bordeaux and Grand Cru Burgundy.
In 1990 Bürklin-Wolf began reviewing their vineyard holdings in the context of the 1828 Royal Bavarian Land Tax Classification and after years of exhaustive research they discovered that today’s top vineyards are exactly the same as those identified back in 1828. Today they have adopted a Burgundian model with four tiers: Estate, Village, PC (code for Premier Cru) and GC (for Grand Cru). Thus they are focussed on the production of dry, terroir-driven wines and no longer produce the Kabinett and Spätlese styles defined by the (still current) 1971 German Wine Law
