Vine to bottle. When we were experimenting with chinola (passion fruit), our ultimate goal was to make an all-natural liqueur that still possessed the aromatic fragrance and taste profile of raw passion fruit juice. As our product came to life, it felt fitting to name the liqueur after this sacred Dominican fruit, to honor its origin and forever create memories of sipping chinola-inspired cocktails on the beaches of the Dominican Republic.

Through our unique blend and proprietary formulation, we have created a ‘natural’ liqueur with unparalleled taste and versatility. CHINOLA is a creative collaboration of hospitality experts, spirit industry professionals, and a multi-generational master blender. Our dream was to create an old-world style liqueur from fresh fruit. In 2013, we discovered the magic of the Dominican passion fruit locally called ‘chinola’. The fruit’s unique tartness is balanced perfectly with natural sweetness and tropical essence. It is ideal for creating sensational cocktails. This amazing fruit was the inspiration behind our Chinola liqueur.

A fresh take on the forgotten French aperitif, Mistelle. Why it’s been pushed aside for more predictable aperitifs, we don’t know. But you can be damn sure (pardon our French) that many people will love this fancy rhubarby version. Our ‘petit homage’, as those folks in France might say.
Mistelle is often made in Normandy using apples or grapes, but in a radical break from tradition, RHUBI is crafted in Victoria from fresh Aussie rhubarb, by pairing the fermented rhubarb juice with juniper spirit, gentian, grapefruit and mandarin skins.
We call RHUBI a Nouvelle Mistelle because nouvelle means new and Rhubi is exactly that. Nobody has made something quite like it before. Dreamed-up one late night in 2018, behind the bar at Sydney’s famous Bulletin Place. Then perfected over the next few years.
Now, RHUBI is beautifully bottled at 18% ABV and ready for the whole world to enjoy. We reckon they’ll like it. Even the French.
A little tip. Mix 45ml of RHUBI over ice, just add soda & a grapefruit wedge for the perfect spritz.

We’ve been big fans of Amaretto and its marzipan flavour since as far back as we can remember. But it was a shame not to be able to buy a locally made one, so we decided to take matters into our own hands and make the first Australian-made Amaretto.
This is a stripped down version of the classic Italian Amaretto, but with an Australian twist. To make it, we smash apart Australian grown bitter almonds (a by-product of the apricot industry), cook and infuse them in spirit for weeks. This is where we get that big bold marzipan flavour that we love so much. Then we add a pinch of wild Strawberry Gum leaves, harvested from outback NSW, which adds an extra floral boost.
Contains precisely 0.0% artificial colours, flavours and preservatives.
Tasting Notes
On the nose you’ll detect thick marzipan notes but also a smattering of floral and herbal aromas, thanks in part to the addition of Strawberry Gum. A quick swirl opens it up further.
On the palate you’ll be greeted with an explosion of marzipan flavour thanks to a generous infusion of bitter almonds. It’s thick, decadent and syrup-like with plenty of sweetness (although short of ‘visit the dentist’ type of sweet).
On the finish, you’ll experience a long drawn-out ending with brown sugar playing a key role in the length. Its flavours will dance around on your tongue like a house party into the wee hours of the morning.

White Possum Naked Maraschino

Naked Maraschino is an intense cherry liqueur that fuses traditional Italian Maraschino flavours with a smattering of Australian desert peaches.
This luxurious liqueur is the result of over two years of experiments and trials. Many cherries were harmed in the process and we make no apologies for our actions.
Our final recipe goes something like this. First, we crush a ridiculous number of sour cherries into a paste, then slowly ferment the mixture over many weeks to extract those deep funky cherry flavours. This ‘cherry wine’ is then distilled in a pot still where we remove the sharp ‘heads’ and the lousy ‘tails’ of the distillate. From there, we let it rest and age in a small vat until the flavour mellows a little. Then we add a rich infusion of quandongs, a semi-sweet indigenous ‘peach’ that contributes a distinctly fruity aroma, and a couple of other herbs and roots before letting all the flavours rest further and marry together in harmony.
We use real ingredients throughout and deliberately avoid filtering the liqueur to ensure no flavour is filtered out, so you may notice some sediment and oils that may drift out of the liqueur over time. Simply give your bottle a quick shake and all will be normal again!
