One-third comes from some old vines in the Hautes-Côtes, one-third from vines in Maranges (village level) and one-third from a Bourgogne parcel on the edge of Puligny-Montrachet. The Puligny component brings perfume, the Maranges brings a depth of fruit, and the Hautes-Côtes brings the structure and, again, plenty of high-grown perfume. The vine age here is seriously impressive for a red of this level, with 60-, 70-, and 80-year-old vines contributing to the blend. Naturally fermented in concrete tanks with roughly 20% whole bunches, the 2017 Bourgogne Rouge was aged only in used barrels as Marc Bachelet felt the generous fruit in his 2017 reds required no new oak. It really is a cracker for the level.

The Cornu family settled in the town of Ladoix in 1870 and established the domaine in 1875. Edmond Cornu assumed command of the estate in 1956 and in 1959 began to bottle the fruits of his labor. Up until that time all wines made at the estate had been sold to negociants. As the private clientele increased, Cornu also expanded the domaine. With the ascension of his son Pierre to full participation in the domaine, this dynamic family has aggressively pursued additional opportunities to acquire prime vineyard sites. Having expanded the domaine, Pierre is now joined by his cousin, Emmanuel Boireau, in supervising the vineyard and cellar work.
Currently, the estate comprises 15 hectares, 13.5 of which are planted to Pinot Noir and the rest to the classic white grapes of Burgundy (1.5 hectares to Chardonnay plus 0.5 hectare of Aligoté). The vineyards are spread across the communes of Ladoix, Chorey, Aloxe Corton and Savigny in the Côte de Beaune and a small parcel in Corgoloin in the Côte de Nuits.
The entire crop is harvested by hand. The grapes are completely destemmed. The fermentation for the reds and the Aligoté occurs in stainless steel tanks; pigeage and remontage are part of the fermentation process for the red wines, the extent to which either is done is dependent on the structure of the particular vintage. Fermentation temperatures normally range between 30 and 32 degrees Celsius. After the alcoholic fermentation, the red wines are racked into small barrels to age for 15 to 20 months, again the length of elevage depends on the structure of the wine; the more sturdy and complex the wine, the longer the wine ages in barrel. The malolactic fermentation is done in barrel. The wines are rarely fined and only occasionally filtered. The few white wines produced at this domaine are, with the exception of the Aligoté, fermented and aged in small barrels with a minimal use of new oak.

ORIGIN
Pinot Noir originates from the first wild vines selected by mankind. It was probably cultivated in Gaul before the Roman invasion. Its presence is recorded in Burgundy during the 4th century after Jesus Christ. “Pinot Vermeil” is mentioned in the region’s hospital register dating back to 1375. It is the only grape variety, maintaining the same name for so many centuries. More of a homebody than a traveller, it symbolizes the almost mythical relationship between a grape variety and its terroir. Original and capricious, it is sensitive to the slightest variations in terms of soil. Contrary to other varieties, that have adapted to other locations, Pinot Noir remains loyal to Burgundy, its region of origin. It provides an extraordinary variety of expressions as it is present within all of the Jurassic zones – marls from the Lias era in Maranges, marly-limestone soils in Pommard and Volnay, crinoidal limestone in GevreyChambertin or limestone in Premeux. Thanks to their selection of the best vines, generations of growers have made Burgundy a unique vineyard by perfectly matching the grape variety, with the terroirs and climates.
THE TERROIR OF OUR WINE
Regional Appellations are wines that can be made out of a blend of several locations, recognized within the appellation area. Wine merchantmaturer is a special profession, involving the careful selection of the best parcels for winemaking, according to the vintage. When it comes to our Bourgogne Rouge, we have selected parcels in Côte Chalonnaise, just next to Givry, in Côte de Beaune, near Volnay and in Côte de Nuits, close to Premeaux Prissey.

Wines made from the Aligoté grape are exclusively white.
Aligoté accounts for 6% of all vines in Bourgogne and has a long history here as one of the two local white varietals along with Chardonnay. It is a vigorous vine with larger and more plentiful grapes than Chardonnay.
Bourgogne aligoté is a delicious white wine that is young, stylish and is a little different. It is pale gold in color and offers a well-balanced taste, and ranges from a fruity bouquet with notes of apple and lemon to a more floral palette. In the mouth, this vibrant wine tickles the taste buds.

Gilles Ballorin and his wife Fabienne started out quite modestly in 2005 – with only 0.60 hectares of vines. After many years in the wine business working with other things they decided to go into production themselves, creating a domaine of their own. Today they have five hectares of vines, a giant winery in Morey-Saint-Denis and Bordeaux style labels on the bottles.
There are good and bad things about not having the heritage, not coming from a long line of winegrowers, says Gilles Ballorin. One thing is that I don’t have a name to rely on, so I really have to make sure I make good wine.
It was after having worked for the cooperative in Igé and Mercurey based négociant Antonin Rodet that he decided it was time for a change.
I had worked for other people for more than ten years and I was bored with it, he explains. Since I had been working for wine companies and since I like wine I thought about doing something in the same territory. Wine is a passion of mine, but I had to find out what I wanted to do. Wine merchant could have been one option, run a website on wine another. But I had some training in the vineyards and I enjoyed it very much, it was my environment.

45 ha owned exclusively in Premiers and Grands Crus, in the heart of Burgundy, in the most beautiful villages of Côte de Beaune : Santenay, Chassagne Montrachet, Puligny Montrachet, Beaune, Savigny-lès-Beaune, Pernand Vergelesses and Corton.
After a mild winter, spring settled down with important variations of temperatures and abundant rain which engendered millerandage (small berries). Summer was warm punctuated by several heat waves and a few thunderstorms épisodes which brought some water. The harvest started mid september under a bright sunshine. After a whole cluster fermentation in vat, the wines are aged in oak casks for a period of 12 up to 14 months in our XVth century cellar. The red wines of 2019 are crunchy and complex with a beautiful fruit combination.
