Aromas could be described between a tea infusion (bergamot, verbena, linden, thyme and rosemary), a sake and a white beer. Sublime fruit, lush texture, stunning aromas and tension and a super refreshing bitter finish.
2 weeks skin contact, fermentation with natural yeasts and 6 months ageing in old barrels with a little oxidation. No filtration, no fining, low sulphur.

Jean-Philippe Padié grew up in Bourgogne and studied in Montpellier. In 2003 he founded his own estate in Calce, Roussillon. Today he has 30 small parcels of vines over 15 hectares. Padié is passionate about making small-scale, high quality wines from his exceptional terroir. He practises organic and biodynamic viticulture, making wines from extremely low yields and old vines. He uses only wild yeasts, no additives and no sulphur until bottling, in a mix of tanks, old and new barrels of different sizes; in short, very naturally.
