This is Ayunta,a family owned, little grape farm & winery, running 2,8 hectares of old vineyards at almost 700 meters above the sea level on the northern slopes of the Mount Etna in Sicily, close to the little village of Randazzo, about one our driving north the city of Catania.Our focus is to produce wines with the best personality of the terroir and the indigenous grapes from Mount Etna.
We work manually in the vineyards, using no chemicals and winemaking in artisan way only the best grapes.In our wines we look for elegance, balance and freshness, to report the pure taste of the terroir and all the differences of every vintages in every single vineyards.
Our winemaking protocol is very easy: only grapes and only time.
We release our wines only once ready.

Three friends founded Azienda Agricola COS, in 1980: Giambattista Cilia, Cirino Strano and Giusto Occhipinti. The acronym of their last names is where the name for the winery – COS – comes from.

For over 3000 years, the Earth has had grape vines. This is an extraordinary gift that we have been given and that we have received with humility and work with in our own way. We are always looking to work as artists in terms of our concept of a wine. This has enabled us to undertake a very difficult path but one that we are fully satisfied with and that we intend to pursue wholeheartedly. For the past 30 years, we have been creating our history and putting it into every glass of our wine, our story, the story of our ancestral lands.

Feudo Arancio Nero d’Avola 2019 Sambuca di Sicilia, in the province of Agrigento, where rich, mature, and structured Nero d’Avola is obtained. It prefers clay-like terrain and is very sensitive to excessive dryness and too much exposure to sunlight. The type of farming is “Espalier”, used with an average density of planting where there are 4500 plants per 2.5 Acres.
100% Nero d’Avola. The sustainably grown Nero d’Avola is harvested in the first week of September once the grapes reach ideal polyphenolic maturation. Destemming and alcoholic fermentation occurs in contact with the skins for six to eight days at 22-24°C. Malolactic Fermentation occurs with select yeast. The wine is matured for six months in French oak barriques.
Deep ruby-red colour with violet reflections. Intense with notes of currant, wild strawberries, and pomegranate. Soft and velvety texture. Distinct fresh and fruity characteristics.

The grapes come from the area of Salemi, located at an altitude of about 140 meters above sea level. The soil, rich in organic substances, has a loamy structure and rock fragments.
From early to mid September.The grapes are harvested in the coolest hours of the day.
The grapes which have been selected are macerated on the skins for about 10 days and then they are placed in steel tanks maintained at a constant temperature of 20°C. After the natural malolactic fermentation, the wine is matured in steel tubs before it is aged in the bottle.
Intense ruby red in colour, with purple hues. It has a fruity bouquet with hints of red berries (cherries, blackberries). It has a rich flavour, with the typical acidity of Nero d’Avola and with a long finish.

Marabino Rosso Di Contrato 2015 is made from Nero d’Avola grapes. Deep dark red colour with black tinged edges and a dark red hue. Fresh Morello cherry aromas combine with black cherries, liquorice, earth and aromatic herbs. The juicy palate dishes up generous flavours of Morello cherries, liquorice and black cherries over earthy dried herb infusions and spice. Chewy tannins along with vibrant acidity making for an energetic finish. Brightly lit juicy red fruit, dried herb, light earth and spice aftertaste.
