Black Cocky Jolliffe Cabernet Sauvignon 2019 Margaret River

Black Cocky Jolliffe Cabernet Sauvignon 2019
I first met Mark in the Cowaramup Bowls Club in 2017 and managed to convince him to sell me some Cabernet in 2019 for the first time. The vineyard is in the heart of Wilyabrup and is well established, being dry grown over the famous ironstone gravels and clay of Wilyabrup Valley. The vines produce small, compact bunches that show exceptional concentration of flavour.
The Cabernet was fermented in small, open top fermenters and hand plunged daily. After 21 days on skins, the wine was basket pressed to a mixture of new (33%) and old French barriques. The wine spent close to 18 months in barrel before being hand bottled.
In the winery we draw inspiration from our namesake, the Black Cockatoo by creating wines that are fun, vibrant and bold. Fruit is sourced from some of the most premium vineyards in the South West, with preference for growers who farm sustainably. In the winery the fruit is handled gently, typically using wild or indigenous yeasts with no fining or filtration.
