INGREDIENTS
We choose to use the best ingredients available, rather than cut corners; lemons and oranges grown in New Zealand, hand picked cherries from Otago and sustainably sourced honey. Our goal is to not only use the best ingredients, but to help grow New Zealand business along the way.

DISTILLING PROCESS
Our ethanol is made from sugar cane the same way they did it in the 1900’s. This is unique in New Zealand. It’s cheeper and easier to use the alternative, whey ethanol, (made from milk), which is used by most brands. We believe in using the best to make the best, rather than taking short cuts that compromise the quality of our product.

Our still is New Zealand made and custom built for our Distillery. By choosing to get our still made locally we where able to insure the absolute best quality and craftsmanship, while supporting the grass roots distilling industry in New Zealand.

We are proud to be New Zealand made and walk the walk, not just talk the talk. Next time you are in your local liquor store look for the words “New Zealand made” on the bottle and not just “New Zealand”. Willett Straight Rye Whiskey. Willett Family Estate Bottled Straight Rye is aged in hand selected white oak barrels for 3 years after which it is hand bottled at cask strength. Distilled, and aged at Willett, this 3 year old straight rye whiskey is a mingling of two different mash bills. They combined a high rye mash bill (74% rye, 11% corn, 15% malted barley) with a lower rye (51% rye, 34% corn, 15% malted barley). A larger percentage of the high rye mash was used for this 3 year old expression. Non-chill filtered, and bottled at cask strength, this Rye has a surprising amount of depth considering the age. On the nose there is the smell the corn creeping up alongside big beautiful wintergreen, minty rye spice notes. The spices are a bit perfumey, in a good way. On the palate, this young rye explodes with flavour. The sweet corn notes are present, but thankfully the rye wintergreen, mint notes are able to steal the show. This is another great example of an excellent young rye.

Delord Bas Armagnac Recolte 1985. Produced from Colombard, Ugni Blanc & Bacco grapes.

Copper with gold hue. Opening sniffs offer sweet leather, roast almonds, hazelnut, toffee apple and an array of spices including cinnamon, clove and vanilla. The robust, spicy palate yields baked apple and raisin flavours followed by a wave of cinnamon, clove and nutmeg. Warming spirit tingle, almost prickly. Drying aftertaste of orange zest, vanilla, nutmeg and old leather. If extraordinary length is one indicator of an extraordinary Armagnac, this is a solid example, but not one of the greats. 40% Alc./Vol

Aspect: Topaz color, orange reflections shiny clear.

Nose: Quince, prunes, raisins aromas. Oakwood

OUR RUM
Black Tears is an emotional blend of Cuban rum and seductive Cuban spices. Based on a Silver Dry rum from one of the best distilleries on the island, Black Tears is the first ever dry Spiced Cuban Rum on the global market.

The bittersweet taste is what sets apart Black Tears from all other spiced rums, as well as its low sugar content, which is typical for Cuban rum. It is spiced with coffee and cacao which have played a large hand in Cuba’s history and aji dulce which is one of the most distinctive flavors in Cuban cuisine.

Sometimes love is found in the strangest of places. The chance meeting of a one-eyed muscle bound sailor with waif of a girl the shape of a toothpick sparked a truly unique relationship. Popeye and Olive were two peated whisky barrels filled on the same day – and named after these two cartoon characters. There is never any guarantee the whisky from barrels named after couples will end up in the same bottle. Sometimes though, there is that certain magic and the whisky from Popeye and Olive certainly had this for us. And as Celine Dion so aptly puts it, if you are truly in love you’re not in love, you’re in “lurve”.

Tasting Notes: 52% alc/vol, available in 700ml bottles only and limited to 300 hand-numbered bottles. Deep auburn in colour, this exquisitely peated whisky remains true to the Fleurieu style. Hints of gentle smoke and sweet iodine peat on the nose give way to briny coastal infused malt and umami on the palate. The balance between sweet smoky toffee and wisps of toasted walnuts mingle well with overtones of dried stone fruit. DESCRIPTION
Grown on the Peninsula de Azuero, the sugarcane matures in ideal tropical climatic conditions. Historically cultivated for the sugar industry, they also produce the syrup and cane juice (guarapo) which boasts perfect organoleptic characteristics for the elaboration of a RON of Great Origin.
The must is distilled in the traditional fashion, in copper columns of 20 trays, to obtain a distinguished, lavish and fruity spirit. After a long aging in American oak casks in its homeland, this RON PANAMÁ travelled across the Atlantic to come and perfect its finesse in the Charente region, inside our cool cognac cellars.

TASTING NOTES

Color
Deep mahogany.

Nose
A bunch of aromas characterized by notes of coconut, Tonka beans and vanilla sugar. The aromatic strength recalls the typicality of the sugarcane.

Palate
Generous and marked with sweet patisserie notes, licorice and cinnamon mixed with hints of wood and smoke carried by the Bourbon cask aging.

I have great memories of many years ago filling Tawny into used
whiskey barrels that had been imported straight from distilleries in
the USA. As the Tawny went in, wonderfully rich whiskey aromas
filled the air and when revisiting these barrels some time later, the
old Tawny inside showed the distinct flavours of the spirit that had
originally been in those casks. Added to that were the typical,
beautifully aged rancio Tawny characters you’d expect to taste.
Some years ago we decided to relive this memory by importing a
number of used Bourbon barrels from Kentucky, USA, and filling
these with a special Tawny. These barrels have made a home in
our dusty fortified shed and are maturing gracefully.
Here’s the result!

Kujira Ryukyu 30YO Whisky. Distilled with 100% premium Indica rice, Kujira Ryukyu Whisky is aged in selected Sherry, Bourbon and White Oak Virgin casks for more than 30 years in Okinawa, a beautiful southern tropical island of Japan with warm and humid weather all year round.

This unique expression brings full body and smooth experience, with notes of ripe berries which come to the fore while woody tannins that have been ripened for years bring the puckery sourness of Chinese herbs. A hint of nectar and woody character linger long after taste. Decades of maturation gives off deep woody scents of toasted oak barrels, and leaves a pleasantly strong flavour and long-lasting sweetness.
