Kerry Greens Hickson Chardonnay 2018 Victoria Mornington Peninsula
The 2018 vintage produced pristine fruit hand harvested at only 800kg per acre. Whole bunch pressed into barrel -20% new- and left on full solids until racking late December of the same year. Primary fermentation took place using wild yeast and without the assistance of sulphur. Malolactic naturally kicked off the following spring, partially completing before giving it up on its own accord.
