About L&S Merchants
We like to push the boundaries of conservative winemaking and employ techniques learnt at home and abroad over the last 10 years to deliver interesting and thought provoking wines. NATURAL ?
We are not natural winemakers. We follow a minimal intervention approach to winemaking, aiming to express the individual vineyard sights (terroir) through wine that is an expression of the vintage and growing season. We believe that less is more. A hands off approach, letting the juice do its thing, natural yeasts are encouraged to thrive however due to the weather, temperature and natural factors, sometimes it needs a hand to finish the fermentation process. We don’t add acid or fine our wines and all of our wines are vegan.
SULPHUR
Sulphur is naturally present in grapes and a lot of fruits and vegetables we eat. We add minimal amounts of sulphur if/when we need to and always a teeny bit before bottling to help preserve what we, along with nature have created.
GROWERS
We source our fruit from likeminded growers who are passionate about the varieties they grow and want to see them made into great examples of those varietals. We name the growers on our labels and make sure we pay them on time. Owning a vineyard is tough work all year round and we appreciate all the work they do.
