Matured in French oak barrels and finished in banyuls barrels from the Coume del Mas estate, bottled in May 2020
Production of 550 bottles
55.5% vol. – 500 ml bottle

Produced through double maturation, this French Single Malt was first aged in French oak barrels before moving on to Banyuls Rimage barrels. The finishing barrels come from Domaine Coume del Mas, in Banyuls sur Mer and exclusively contained natural sweet wines of Grenache Rimage, aged without oxidation.

MATURATION :
AT THE EXIT OF THE STILL, THE MALT BRANDY MUST UNDERGO A STRUCTURING PHASE TO GAIN BODY AND VOLUME. IT IS THE ROLE OF THE NEW BARRELS WHICH, BY RELEASING TANNINS, WILL CONSTITUTE THE BASES OF THE FUTURE WHISKEY. THIS PHASE LASTS BETWEEN 3 AND 4 YEARS.
FINISHES :
THIS IS THE TECHNIQUE OF USING BARRELS THAT HAVE ALREADY CONTAINED WINE OR OTHER BRANDY TO BRING AN AROMATIC COMPLEXITY AND A UNIQUE IDENTITY. THIS PHASE LASTS BETWEEN 6 AND 18 MONTHS.
