Dutschke Bourbon Barrel 10 Year Old Tawny
I have great memories of many years ago filling Tawny into used
whiskey barrels that had been imported straight from distilleries in
the USA. As the Tawny went in, wonderfully rich whiskey aromas
filled the air and when revisiting these barrels some time later, the
old Tawny inside showed the distinct flavours of the spirit that had
originally been in those casks. Added to that were the typical,
beautifully aged rancio Tawny characters you’d expect to taste.
Some years ago we decided to relive this memory by importing a
number of used Bourbon barrels from Kentucky, USA, and filling
these with a special Tawny. These barrels have made a home in
our dusty fortified shed and are maturing gracefully.

Rogue Oregon Rye Malt Whiskey.
One of few malted rye whiskeys, the malting process in Rogue’s hand-crafted Oregon Rye Malt softens the spice notes typical of rye whiskeys and makes for a more approachable whiskey that builds in flavor. The barley in the mash bill (52% rye, 48% barley) further rounds out the taste and mouthfeel creating an easy sipping experience. Complex nuttiness is softened by light caramel and a hint of citrus leading to cinnamon, nutmeg and black pepper.

Old Kempton The Old Stables Single Malt Whisky.
The Old Stables has been created to be the perfect introduction to the Old Kempton whisky range.
Bottled at a modest 40.5% alc/vol, this small batch release is wonderful for sharing a dram with friends over dinner.
Colour – Golden brown.
Nose – Soft vanilla, malt & dried fruit on the nose. On the second inspection, cereals & nutty flavours.
Palate – Beautiful texture, good integration of the alcohol. The balance of the whisky is lovely with fruit and intense spices on the finish. Good length, very persistent on the tongue.
Corra Linn Single Malt Whisky.Corra Linn Distillery is situated in Relbia overlooking the valley of the North Esk River. It is this pristine water that flows from the mountain reserves that forms the main ingredient of the whisky produced. Corra Linn Distillery prides itself in precision, small batch production using the finest Tasmanian ingredients. Quality malt, Tasmanian honey and oak barrels refashioned by Tasmania’s renowned cooper, charred to specification, all assist in providing flavours during the ageing process. The master distiller techniques and the ageing process, reveal and achieve the full rich botanical flavours providing a unique taste. The amber liquid has a light start with balanced oak characters, revealing the port and sherry overtones from the refilled barrels used. It is soft and sweet, with layers of citrus and has a spiced finish which gives it full expression showing its eloquence and giving it character, putting it into a class of its own.

Matured in French oak barrels and finished in banyuls barrels from the Coume del Mas estate, bottled in May 2020

Produced through double maturation, this French Single Malt was first aged in French oak barrels before moving on to Banyuls Rimage barrels. The finishing barrels come from Domaine Coume del Mas, in Banyuls sur Mer and exclusively contained natural sweet wines of Grenache Rimage, aged without oxidation.
Our mature Straight Rye Whiskey mellowed for a further 4 months in a 9 year Tawny Fortified Wine barrel from Dutschke Wines, a family operated Barossa winery.
RYE IS THE GOSPEL
It is widely believed that whiskey was first distilled for medicinal use by monks and apothecaries in Scotland and Ireland. The distillation of whiskey evolved as it moved from monastic to secular, as it did with the path of migration over hundreds of years.
Early Scotch-Irish settlers in the USA used rye to make whiskey because barley didn’t adapt to the North American climate. These conditions are also true for the dry climate of Australia, where we set out to reimagine this original American spirit using 100% Australian rye.
We use proven techniques of the world’s most famous distilleries, coupled with the attention to detail that only a craftsman can offer, to create rye whiskey with passion, integrity, tradition and belief.
The Gospel founders Ben Bowles and Andrew Fitzgerald are long term disciples of the craft of distilling. Ben, a South Carolina native, learnt how to distil before he was old enough to drive.
Set in the backstreets of Melbourne’s eclectic Brunswick neighbourhood, Ben and Andrew designed and built a distillery big enough to match their dreams, but small enough to remain hands on where it matters. With the help of family and friends, the distillery was built over an 18 month period. It features a six metre high continuous column still, designed and built in-house, as well as a bespoke Copper Pot still.
The Gospel wider team are an experienced group of wine makers and brewers, all of whom have a fierce love for deliciously unpretentious rye whiskey.

Taylor & Smith Dry Gin

The fresh spirit of Tasmania’s ancient Huon Pine, iridescent abalone shell and pristine water. A nod to a London Dry, our Dry Gin features the four key botanicals of sage, abalone shell, Huon Pine needles and red grapefruit. Fresh sage is grown in our distillery garden and we source the shell whilst on family abalone dives. Once cleaned, the shell is dried and broken into tiny pieces to infuse in the gin. Abalone shell, used in Chinese medicine, is a calcium carbonate to neutralise the acids and adds a slight salinity. Huon Pine (Lagarostrobos franklinii) is a species of conifer native to Tasmania. It is found by the edge of rivers and is an incredibly slow growing, revered local timber. The needles provide pine notes that differ to juniper and add to the complexity of the dryness.
Taylor & Smith is an independent artisan distillery in Hobart owned and run by Natalie and Ben. We experiment with Tasmanian botanicals and carefully craft our base spirits to synthesise the Tasmanian landscape and write out the stories of place.
The scale of the season is compressed in Tasmania so you get an intensity of flavour in our botanicals. The air is phenomenal and the water that feeds directly to the distillery comes from a lake of snow melt at Mount Field National Park.
When we first started making spirits we’d take around little jam jars of gin and leave them on our neighbours doorstep. People would turn up on a Friday night home from work and find a jar of gin. In reciprocation they would turn up at our place with lemons, quinces, cumquats or other botanicals they were hoping would feed back into the gin. Along with experimentation, another defining characteristic of our process is our focus on the handmade. We don’t have any automated systems. It’s come from the heart. We love to bring people together through our spirits, and small things that are beautiful in the right place can enhance a moment.
Jacoulot Highland Single Malt Scotch Whisky 13YO. Jacoulot are one of the well-reputed makers of marc de Bourgogne, and what they’ve done here was to buy and finish some Tullibardine in some of their marc casks.
Rare, original and very successful: the Tullibardine fruit aged for a year in the Marc de Bourgogne barrel!
Tatin nose, salted butter cramel, muesli mouth, saline notes, dried / candied fruit.
Kujira Ryukyu 20YO Whisky.Founded in 1952, Kumesen Syuzo started on distilling alcoholic beverages, unique to Okinawa islands of Japan, also know as Ryuku islands. Then around 1989, this innovative distillery started to age them in oak barrels, creating a unique kind of ji-whisky in its own category, thus named it the Ryukyu Whisky. With 20 years maturing in bourbon casks, Kujira as a single grain whisky provides a wonderful taste profile that has distinguished itself from its malt counterparts and creates a refreshing choice for spirits lovers.
Taste Notes Nose: herbs, various plum fruits hint, prune, mint candy. Palate: balanced light body, sweet, vanilla, spice, smoky woodiness. Finish: licorice, Japanese pepper, medium finish
Michel Couvreur XV 2005-2020 Single Malt.
Distilled in Scotland in 2005, wholly matured in a Palo Cortato cask in our Burgundian Caves and bottled at strength in 2020.
Floral, fine and delicate, it presents unusual scents of flint, dried flowers flavours. Always the same silky texture and spice provided by the sherry barrels which are intense in the mouth. Pretty orange bitterness, reminding old liquors, enhanced by a slightly toasted finish.
Kujira Ryukyu 30YO Whisky. Distilled with 100% premium Indica rice, Kujira Ryukyu Whisky is aged in selected Sherry, Bourbon and White Oak Virgin casks for more than 30 years in Okinawa, a beautiful southern tropical island of Japan with warm and humid weather all year round.
This unique expression brings full body and smooth experience, with notes of ripe berries which come to the fore while woody tannins that have been ripened for years bring the puckery sourness of Chinese herbs. A hint of nectar and woody character linger long after taste. Decades of maturation gives off deep woody scents of toasted oak barrels, and leaves a pleasantly strong flavour and long-lasting sweetness.
Nose: nectar, caramel, heavy wood smoke of antique furniture
Taste: smooth and supple with complex tones of fruits citrus, caramel pudding, dried persimmons, sugar and rich ripe berries; wood tannins bring the puckery sourness of Chinese herbs
Finish: little nectars dotted among smell of wooden barrels with a long lingering finish of sweetness.
