PERMANENT CUVEE – 70 CL – 46%
Produced by double maturation, this Single Malt was first matured in French oak barrels (20% new + 80% second fill barrel) and then matured for a further 6 to 12 months in ex-sweet white wine barrels. The finishing barrels, which contained exclusively Semillon, came from Château Doisy-Daëne, a Sauternes-Barsac Grand Cru Classé.

MOUTH FEEL : Unctuous and delicat attack, good mouthfeel, greedy and silky finish

Sémillon is a white grape variety native to Sauternes and Barsac, where it produces the world’s greatest sweet wines. Although in its raw state it is not very aromatic, the intervention of a fungus, the botritis cinerea, will develop natural defences in it which will prove to be the precursors of aromas. In the end, it is the magic of noble rot that is at the origin of the unequalled character of the great wines of Sauternes and Barsac. These wines are characterised by complex and persistent notes of yellow fruit such as apricot, muscat, candied fruit, almond and, often, exotic notes.

To produce a French whisky with a Semillon finish is to look for an intense and flavoursome malt with notes of candied fruit.

MATURATION :
AT THE EXIT OF THE STILL, THE MALT BRANDY MUST UNDERGO A STRUCTURING PHASE TO GAIN BODY AND VOLUME. IT IS THE ROLE OF THE NEW BARRELS WHICH, BY RELEASING TANNINS, WILL CONSTITUTE THE BASES OF THE FUTURE WHISKEY. THIS PHASE LASTS BETWEEN 3 AND 4 YEARS.
FINISHES :
THIS IS THE TECHNIQUE OF USING BARRELS THAT HAVE ALREADY CONTAINED WINE OR OTHER BRANDY TO BRING AN AROMATIC COMPLEXITY AND A UNIQUE IDENTITY. THIS PHASE LASTS BETWEEN 6 AND 18 MONTHS.
