Save Our Souls Sauvignon Blanc 2017 Victoria Yarra Valley
$23.95
Save Our Souls Sauvignon Blanc 2017
Yarra Valley Sauvignon from Coldstream.
Nectarine, dried pineapple, hazelnuts, lime, orange rind, honey, tomato leaf, textured, savoury.
Eat. Grilled garfish with a squeeze of lemon or a bag of cheese twisties
Pristine in appearance with a pale golden straw colour. Slightly reductive on opening with hints of necaterine, dehydrated pineapple, orange rind and honey. It is richly textured and very savoury with juicy acidity.
Brown Brooke Estate is on the border of Gruyere and Coldstream in the Yarra Valley. It sits on depleted clay loam at the edge of the valley floor.
The fruit was hand harvested after passing the herbal, gooseberry character of classic Sauvignon Blanc and started to approach more rose petal and muscat flavours. It was immediately pressed into tank and chilled for 48 hours. Alcoholic fermentation occurred naturally and was followed by full malolactic conversion. The finished wine stayed in tank on gross lees for 11 months. No sulphur was added until bottling.
